Hey, all! I'm a student at the College of William and Mary and Love creating interesting foods from what's provided to me at our various dining halls. You'd be surprised what can be made with a salad bar, sandwich bar, and grill! Do you have ideas you want to share? Post it on the subinterest!


Egg Sandwich

Finally a dining hall creation! On my dining hall, we have a sandwich station, but as a vegetarian, there aren't many options when it comes to protein. So--- first I went to the breakfast station to get scrambled eggs. At the sandwich bar I got: foccocia bread, cheddar, provolone, tomato, avocado, and chipotle mayo. Then, I melted the cheese and added the eggs. YUM!


Spicy, Crunchy, Yum

My new favorite snack! Take a fresh green bell pepper, and cut it into quarters. Then, put a dollop of plain Greek yogurt on top. Sprinkle some cayenne powder on top for a tasty kick! I've had this a few times this summer, and now that I'm back at school I realize it's the perfect study snack, maybe even a light dinner. Enjoy :)


B*tchn' Bean Burgers

Being a vegetarian has been... Interesting. My diet here has largely consisted of eggs, white rice, white bread, black beans, and pizza. I was getting sick of filling up on unhealthy things for lunch, so I made these Delicious bean burgers! The ingredients were really decided by availability. In this version of bean burgers are: garbanzo beans, red beans, red peppers, yellow onion, garlic, bread crumbs, corn, eggs, salt, and tomatoes. My friend Maddy and i mixed up the ingredients (after cooking the beans and sautéing the veggies), and put half of the mixture in the blender. Then we divided the mixture up in plastic bags and stuck them in the fridge! Now everyday I take a handful of burger mixture out, plop it on a skillet, cut a slice of of my weekly tomato, and make a fresh burger for lunch! Also, I finally found some Mustard in the grocery store for some tasty flavor!



It’s time to get creative with the Salad Bar! I agree with the majority of people who say that plain-ole lettuce salad isn’t enough for dinner. That’s why this delicious dish includes not only those veggies full of good things, but also protein like tofu, and grains like rice. Another name for this dish might be “Cid’s Healthy Happiness”—but more on that dish later.

I challenge you… create your own healthy happiness. Pick a grain, pick a protein, load it up on veggies! Remember, mixing hot with cold adds a very interesting dynamic! My personal favorite combination is: brown rice, nuts, cranberries, clemintines, red pepper, and spinach!

... You won't belive me until you try it, but this combination reminds me a lot of tuna, in a good way. When I was little one of my favorite things to eat was tuna melts. Now as a vegetarian, my cheese-covered tuna sandwich days are over, but luckily a replacement is in sight! I'm curious to see what you guys think! Let me know if you try it and if you agree. When I get back to the states I'm going to try to make a vegetarian tuna melt :D
